200g rolled oats
300ml almond milk
300ml coconut milk
1 tsp ground ginger
2 tbsp maple syrup
2 British apples such as Braeburn
½ carrot
1 knob of ginger
Mix the oats, almond milk, coconut milk, ground ginger and maple syrup in a large bowl.
Core and chop the British apple, chop the carrot and grate the ginger. Then fold them into the mixture, leaving a little apple aside.
Cover, then put in the fridge overnight or for at least 4 hours.
When ready, divide into 4 cups and top with the leftover apple.
